Maccheroni Bobbiesi with salami paste ragout and Salame Piacentino DOP San Bono julienne

Ingredients for 4 people:

1 medium onion, 1 carrot, 1 stick of celery, 1 garlic clove, lightly chopped rosemary and parsley.
1 glass of white wine, extra virgin olive oil as required, 200 g of salami paste.
8 slices of Salame Piacentino DOP San Bono, 1 glass of tomato sauce.

Method:

Chop the vegetables and put them in a pan with a little garlic, add the minced salami paste, fry and add the white wine. When the liquid has reduced by about three quarters, add the tomato puree and cook over low heat for about an hour and a half. Add salt and pepper.

Cook the macaroni in salted water, sauté with the meat sauce and a knob of butter and finally add the Salame Piacentino DOP San Bono cut into strips. Put the pasta on a serving dish and add a little more of Salame Piacentino DOP San Bono around it.
