There are the three leading products, 100% Italian, made according to strict PDO regulations: Coppa, Pancetta and Salame Piacentino. To be the proud holder of this certification, precise rules have to be followed on the origin of the meat (from the certified Emilian supply chain only), on processing and salting, strictly by hand, and on the minimum maturing periods that change depending on the type of product.
